Description

Ingredients

For the Bowl:

  • 1 lb boneless, skinless chicken breast

  • 1 cup cooked rice (white, brown, or cauliflower rice)

  • 1 cup mixed veggies (broccoli, bell peppers, carrots, etc.)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

For the Bang Bang Sauce:

  • ½ cup mayonnaise

  • 2 tablespoons sriracha (adjust to taste)

  • 1 tablespoon honey

  • 1 teaspoon garlic powder

  • 1 teaspoon lime juice


Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a pan over medium heat. Cook chicken 5–7 minutes per side until done. Slice into bite-sized pieces.

  2. In the same pan, sauté mixed veggies for 4–5 minutes until crisp-tender.

  3. Whisk together all sauce ingredients in a bowl.

  4. In serving bowls, layer rice, veggies, and sliced chicken. Drizzle generously with Bang Bang sauce.
