Ingredients
For the Bowl:

1 lb boneless, skinless chicken breast

1 cup cooked rice (white, brown, or cauliflower rice)

1 cup mixed veggies (broccoli, bell peppers, carrots, etc.)

2 tablespoons olive oil

Salt and pepper to taste
For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sriracha (adjust to taste)

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon lime juice
Instructions

Season chicken with salt and pepper. Heat olive oil in a pan over medium heat. Cook chicken 5–7 minutes per side until done. Slice into bite-sized pieces.

In the same pan, sauté mixed veggies for 4–5 minutes until crisp-tender.

Whisk together all sauce ingredients in a bowl.

In serving bowls, layer rice, veggies, and sliced chicken. Drizzle generously with Bang Bang sauce.
