Ingredients

1 lb ground beef

1 packet taco seasoning

½ cup water

1 cup shredded cheddar cheese

½ cup diced red bell pepper

½ cup chopped green onions

12 egg roll wrappers
-
Vegetable oil, for frying

Fresh cilantro, chopped (for garnish)
Optional for serving: Salsa, guacamole, extra sour cream, hot sauce
Instructions

Cook the Beef:
Brown ground beef in a skillet over medium heat. Add taco seasoning and water; simmer until thickened. -
Make the Filling:
In a bowl, combine seasoned beef, red bell pepper, green onions, and cheddar cheese. -
Assemble the Egg Rolls:
Place 2 tablespoons of filling in each egg roll wrapper. Top with a small dab of sour cream. Roll tightly, sealing edges with water. -
Fry:
Heat oil to 350°F. Fry rolls in small batches for 2–3 minutes per side, until golden and crispy. Drain on paper towels. -
Serve:
Garnish with fresh cilantro and serve hot with salsa, guacamole, or more sour cream.
