The ultimate crispy, cheesy, Tex-Mex party snack — loaded with seasoned beef, melty cheddar, and wrapped in golden, crunchy egg roll wrappers!


Ingredients

Scale
  • 1 lb ground beef

  • 1 packet taco seasoning

  • ½ cup water

  • 1 cup shredded cheddar cheese

  • ½ cup diced red bell pepper

  • ½ cup chopped green onions

  • â…“ cup sour cream

  • 12 egg roll wrappers

  • Vegetable oil, for frying

  • Fresh cilantro, chopped (for garnish)

Optional for serving: Salsa, guacamole, extra sour cream, hot sauce


Instructions

  1. Cook the Beef:
    Brown ground beef in a skillet over medium heat. Add taco seasoning and water; simmer until thickened.

  2. Make the Filling:
    In a bowl, combine seasoned beef, red bell pepper, green onions, and cheddar cheese.

  3. Assemble the Egg Rolls:
    Place 2 tablespoons of filling in each egg roll wrapper. Top with a small dab of sour cream. Roll tightly, sealing edges with water.

  4. Fry:
    Heat oil to 350°F. Fry rolls in small batches for 2–3 minutes per side, until golden and crispy. Drain on paper towels.

  5. Serve:
    Garnish with fresh cilantro and serve hot with salsa, guacamole, or more sour cream.
