Description

The ultimate comfort food — juicy meatloaf base, creamy mashed potatoes, melty cheddar, and green onions baked into one hearty casserole!


Ingredients

For the Meatloaf Layer:

  • 1.5 lbs ground beef

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup breadcrumbs

  • ¼ cup milk

  • 1 large egg

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ cup ketchup

For the Potato Layer:

  • 2 lbs potatoes, peeled and sliced

  • ½ cup sour cream

  • ¼ cup milk

  • 2 tbsp butter

  • 1 cup shredded cheddar cheese

  • ¼ cup chopped green onions

  • Salt and pepper, to taste


Instructions

  1. Prepare the Meatloaf:
    Preheat oven to 375°F (190°C).
    Mix ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire, salt, and pepper.
    Press into a greased baking dish and spread ketchup over the top.
    Bake for 25 minutes.

  2. Make the Potato Layer:
    Boil potatoes for 15 minutes until tender.
    Drain and mash with sour cream, milk, butter, salt, and pepper.

  3. Assemble & Bake:
    Spread mashed potatoes over the meatloaf.
    Top with cheddar cheese and green onions.
    Bake for 20 more minutes, until cheese is melted and bubbly.

  4. Serve:
    Let rest for 10 minutes. Slice and enjoy this hearty, cheesy comfort meal!
