Pesto Chicken Flatbread An Easy Dinner Recipe

This simple and flavorful Pesto Chicken Flatbread is a fantastic dinner solution for busy weeknights, ready in under 30 minute. It uses convenient store-bought ingredients like flatbread, rotisserie chicken, and pesto, which saves time without sacrificing taste. 

Ingredients

  • 2 large flatbreads or naan
  • ½ cup prepared basil pesto
  • 1–1 ½ cups cooked, shredded chicken (store-bought rotisserie chicken is great)
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)
  • Balsamic glaze, for drizzling (optional) 

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Assemble the flatbreads. Place the flatbreads on the prepared baking sheet. Spread the basil pesto evenly over each flatbread.
  3. Add toppings. Sprinkle the shredded chicken and mozzarella cheese over the pesto base. Add the cherry tomato halves and sprinkle with Parmesan cheese.
  4. Bake for 10–12 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden.
  5. Garnish and serve. Remove from the oven. Garnish with fresh basil leaves and a drizzle of balsamic glaze, if desired. Slice and serve warm.
