This simple and flavorful Pesto Chicken Flatbread is a fantastic dinner solution for busy weeknights, ready in under 30 minute. It uses convenient store-bought ingredients like flatbread, rotisserie chicken, and pesto, which saves time without sacrificing taste.
Ingredients
- 2 large flatbreads or naan
- ½ cup prepared basil pesto
- 1–1 ½ cups cooked, shredded chicken (store-bought rotisserie chicken is great)
- 1 ½ cups shredded mozzarella cheese
- 1 cup cherry tomatoes, halved
- ¼ cup grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
- Balsamic glaze, for drizzling (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Assemble the flatbreads. Place the flatbreads on the prepared baking sheet. Spread the basil pesto evenly over each flatbread.
- Add toppings. Sprinkle the shredded chicken and mozzarella cheese over the pesto base. Add the cherry tomato halves and sprinkle with Parmesan cheese.
- Bake for 10–12 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden.
- Garnish and serve. Remove from the oven. Garnish with fresh basil leaves and a drizzle of balsamic glaze, if desired. Slice and serve warm.
