Description

A quick, hearty, one-pan dinner with savory sausage, colorful veggies, and juicy tomatoes served over fluffy rice. Perfect for busy weeknights!


Ingredients

  • 1 lb turkey sausage, sliced into ¼-inch rounds (or sausage of your choice)

  • 1 large green bell pepper, sliced

  • 1 medium yellow bell pepper, sliced (optional)

  • 1 large yellow onion, sliced

  • 1 cup cherry tomatoes, halved (or 1 medium tomato, diced)

  • 2 tbsp olive oil or butter

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • ½ tsp salt, or to taste

  • 1 tsp Cajun seasoning (optional for added spice)

  • 2 cups cooked white rice, for serving


Instructions

  • Heat olive oil or butter in a large skillet over medium heat.

  • Brown sausage slices for 4–5 minutes per side. Remove and set aside.

  • Sauté onions and bell peppers in the same skillet for 5–6 minutes.

  • Add cherry tomatoes; cook for another 2–3 minutes until softened.

  • Return sausage to skillet. Season with garlic powder, black pepper, salt, and Cajun seasoning. Stir to combine.

  • Simmer for 2–3 minutes to meld flavors.

 

  • Serve hot over cooked rice and enjoy!
