Ingredients

1 lb turkey sausage, sliced into ¼-inch rounds (or sausage of your choice)

1 large green bell pepper, sliced

1 medium yellow bell pepper, sliced (optional)

1 large yellow onion, sliced

1 cup cherry tomatoes, halved (or 1 medium tomato, diced)

2 tbsp olive oil or butter

1 tsp garlic powder

1 tsp black pepper

½ tsp salt, or to taste

1 tsp Cajun seasoning (optional for added spice)

2 cups cooked white rice, for serving
Instructions

Heat olive oil or butter in a large skillet over medium heat.

Brown sausage slices for 4–5 minutes per side. Remove and set aside.

Sauté onions and bell peppers in the same skillet for 5–6 minutes.

Add cherry tomatoes; cook for another 2–3 minutes until softened.

Return sausage to skillet. Season with garlic powder, black pepper, salt, and Cajun seasoning. Stir to combine.

Simmer for 2–3 minutes to meld flavors.
