Sheet Pan Mediterranean Chicken & Zucchini – Easy & Healthy

This Mediterranean sheet pan recipe is a healthy, easy-to-prepare meal that combines juicy chicken and tender zucchini with vibrant herbs and tangy feta cheese. The recipe requires minimal cleanup and can be customized with other vegetables. 

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cubed
  • 2 medium zucchinis, sliced into rounds or half-moons
  • 1 large red onion, cut into wedges or slices
  • 1 pint cherry tomatoes
  • 3–4 cloves garlic, minced or pressed
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil (optional)
  • ½ tsp dried thyme (optional)
  • ½ cup crumbled feta cheese
  • ¼ cup Kalamata olives, pitted (optional)
  • Fresh parsley or dill, chopped, for garnish (optional)
  • Salt and black pepper, to taste 

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large, rimmed sheet pan with parchment paper for easy cleanup.
  2. Combine ingredients: In a large bowl, combine the cubed chicken, sliced zucchini, red onion, and cherry tomatoes.
  3. Season the mixture: In a small bowl, whisk together the olive oil, minced garlic, dried oregano, and other optional dried herbs (basil, thyme). Pour this mixture over the chicken and vegetables and toss until everything is evenly coated.
  4. Arrange and bake: Spread the chicken and vegetables in a single layer on the prepared sheet pan, ensuring they are not too crowded so they roast evenly.
  5. Bake for 25–30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Add final touches: Remove the pan from the oven and sprinkle the feta cheese and Kalamata olives over the hot ingredients.
  7. Serve: Garnish with fresh parsley or dill before serving. You can serve this as-is or with a side of rice, quinoa, or warm pita bread.
