Description

Creamy, spiced sweet potato filling over a buttery graham cracker crust — all the flavors of classic pie, easy to slice and share!


Ingredients

For the Crust:

  • 1½ cups graham cracker crumbs (or crushed vanilla wafers)

  • ½ cup melted butter

  • ¼ cup brown sugar

For the Filling:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

  • ½ cup brown sugar

  • 2 large eggs

  • ½ cup evaporated milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ¼ teaspoon salt

Optional Topping:

  • Whipped cream or marshmallow fluff

  • Chopped pecans


Instructions

  • Preheat Oven:
    Preheat to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  • Make the Crust:
    Combine graham cracker crumbs, melted butter, and brown sugar.
    Press firmly into the bottom of the pan.
    Bake for 10 minutes. Cool slightly.

  • Prepare the Filling:
    Whisk mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until smooth.
    Pour over crust.

  • Bake:
    Bake for 35–40 minutes or until filling is set.
    Cool completely before slicing.

 

  • Top & Serve:
    Garnish with whipped cream, marshmallow fluff, or chopped pecans. Slice into bars and enjoy!
