Ingredients

½ cup chopped onion

2 tablespoons butter or margarine

1 (10-ounce) can condensed cream of chicken soup

1½ cups milk (whole milk preferred)

1 lb (16 oz) Velveeta cheese, cubed

1 (10-ounce) package frozen chopped broccoli
Optional Add-ins:

Salt and pepper to taste

¼ teaspoon garlic powder

¼ teaspoon paprika or a pinch of cayenne
Instructions

Sauté the Onion:
Melt butter in a skillet over medium heat.
Cook chopped onion for 3–5 minutes until softened. -
Load the Crock Pot:
Add sautéed onions, cream of chicken soup, milk, Velveeta cheese, and frozen broccoli to the crock pot.
Stir in optional seasonings if desired. -
Cook:
Cover and cook on Low for 2.5 to 3 hours, stirring occasionally, until cheese is melted and soup is creamy.

Ladle into bowls and enjoy hot, topped with extra cheese, cracked pepper, or crusty bread on the side.
