This easy one-pan recipe combines tender potatoes, smoky sausage, and a creamy, tangy ranch and cheese sauce for a delicious weeknight dinner. Cooking everything on one baking sheet or in a large skillet minimizes cleanup.
Ingredients
- 1–1.5 lbs smoked sausage (kielbasa), sliced into 1/4-inch rounds
- 1.5–2 lbs baby potatoes, quartered
- 2 tbsp olive oil
- 1 packet (1 oz) dry ranch seasoning mix
- 1 cup shredded sharp cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup milk
- 2 tbsp chopped fresh parsley or green onions, for garnish
- Salt and pepper, to taste
Instructions
- Prep and roast: Preheat oven to 375°F (190°C) and grease a baking sheet. Toss potatoes and sausage with olive oil and half of the ranch seasoning. Spread in a single layer and roast for 25–30 minutes until potatoes are tender.
- Make sauce and finish: While roasting, whisk together ranch dressing, milk, and remaining seasoning. Remove pan from oven, drizzle with sauce, and sprinkle with cheese. Bake for another 5–7 minutes until cheese is melted.
- Serve: Garnish with parsley or green onions before serving.
