Cheesy Ranch Potatoes and Smoked Sausage

This easy one-pan recipe combines tender potatoes, smoky sausage, and a creamy, tangy ranch and cheese sauce for a delicious weeknight dinner. Cooking everything on one baking sheet or in a large skillet minimizes cleanup. 

Ingredients

  • 1–1.5 lbs smoked sausage (kielbasa), sliced into 1/4-inch rounds
  • 1.5–2 lbs baby potatoes, quartered
  • 2 tbsp olive oil
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup ranch dressing
  • 1/4 cup milk
  • 2 tbsp chopped fresh parsley or green onions, for garnish
  • Salt and pepper, to taste 

Instructions

  1. Prep and roast: Preheat oven to 375°F (190°C) and grease a baking sheet. Toss potatoes and sausage with olive oil and half of the ranch seasoning. Spread in a single layer and roast for 25–30 minutes until potatoes are tender.
  2. Make sauce and finish: While roasting, whisk together ranch dressing, milk, and remaining seasoning. Remove pan from oven, drizzle with sauce, and sprinkle with cheese. Bake for another 5–7 minutes until cheese is melted.
  3. Serve: Garnish with parsley or green onions before serving.
